Cancer Survivorship: The Power of Nutrition
We all know nutrition plays an important part in overall health, but what about when you are a cancer survivor? Foods may not taste the same as before or you may need additional nutrients as you are going through cancer treatment. These are just a few of the nutritional challenges that will be addressed by St. Luke’s Registered Dietitian Karen Johnson during the Survivorship: The Power of Nutrition lecture and educational event on Tuesday, February 17, from 5:30 to 7 p.m. at Marshall School Auditorium in Duluth.
Beginning at 5 p.m., St. Luke’s will provide healthy food samples such as a quinoa and tabouli salad, fruit, hummus and more to attendees. Attendees will receive recipes and nutritional content for each of the easy-to-make food items. Cancer survivors, family members and anyone interested in learning more about cancer and nutrition are encouraged to attend to the event.
Karen Johnson, RDN, LD, will be discussing nutrition specifically for cancer survivors. Challenges such as how to receive proper nutrition after cancer treatment and survivorship, how to get back to enjoying foods you like, and how to decrease the risk of cancer through food will be addressed during the lecture. There will be time for questions at the end.
Johnson explained that nutrition is one of the most commonly asked questions during a cancer diagnosis, treatment and survivorship. “Survivors want to know how food can play a positive role during their cancer journey,” said Johnson. Her lecture will further examine common nutritional topics such as vitamins and antioxidants.
Johnson encourages people to attend the lecture to become more informed about nutritional challenges survivors might face. “Education is key and this lecture is a great learning opportunity for survivors and their families to learn more about nutrition as it relates to cancer survivorship,” said Johnson.
